New yeast garners patents
Phyterra Yeast Inc. secured U.S. and New Zealand patents for the hydrogen sulfide-preventing wine yeast it developed in conjunction with researchers at the University of California, Davis. Using “classical breeding methods,” researchers disabled the yeast’s ability to form H2S during wine fermentation, according to a company statement. Details: phyterra.com.
